I look at these beautiful dishes, so foreign to my midwestern tastes. It takes sophistication to be able to order something like this.

This night is an answer to the question: why France. Italy, Germany, England may have similar things to offer, though not necessarily the exquisite (but ordinary -- you find it everywhere) cuisine. And the history of France is the history of Western Civilization, which I feel almost a compulsion to experience.
